The breakfast hash from Todd and Sherry Martin of the Tucson Tamale Company is a delicious treat for any time of day.
This dish was inspired by entry in the Tamale Throwdown at the Tanque Verde location a few years ago. It was a tamale hash. They took the general concept and made it even tastier. Also, tamale and eggs is one of the favorite flavor combinations, and this is another delicious way to enjoy tamale and eggs!
INGREDIENTS
2 Breakfast Sausage & Cheese Tamales
2 Eggs
2 tbsp Olive Oil
2 tbsp Sour Cream
2 tbsp Salsa
2 tsp cilantro – chopped
2 tsp chives – chopped
DIRECTIONS
Steam the tamales in the microwave for 2 minutes. They will not be hot at this point, they will be around 70 - 80 degrees.
Heat the oil in a skillet.
Remove the husks from the tamales and put aside, you will use the husks to plate.
Cut the cut tamales up into 3/4 inch pieces. Put the tamales in the skillet and fry for 2 minutes, Don’t stir. Flip them and fry for 2 more minutes.
Have the eggs scrambled in a bowl. Add the eggs and scramble the eggs together with the tamales.
Have the husks laid out on the plate like a boat. Put the scrambled eggs and tamale hash in the husk.
Top with sour cream, salsa, cilantro and chives - then enjoy!
